Superfood Encrusted French Toast

Ingredients

Your favourite bread
2 cups of Treasured Morning High Protein Superfood (any flavour)
2 eggs
1/2 cup of milk of choice
1 orange
6-7 basil leaves
2 bananas
Maple Syrup (optional)

Instructions

1. Preheat the oven to 190°C

2. Whisk together the eggs and milk until well combined.

3. Spread two cups of High Protein Superfood on a tray.

4. Soak the bread in the eggs and milk. Press it down lightly to make sure it sponges up more egg and milk.

5. Gently, transfer the wet bread to the tray of superfood and cover all sides until covered. Place on a wire rack then cook into the oven for 15 mins. You’ll know it’s done by pressing on the bread - it’ll be a bit more firm, almost springy, and the crust will have darkened a bit.

6. Meanwhile, halve your bananas lengthwise and fry in a lightly greased pan skin-side down. Flip them when the skin has turned black. Cook on the flesh side for another 2-3 minutes.

7. For the orange salad, peel the orange and discard the pith. Dice into random shapes, then toss with the shredded basil leaves.

8. Skin the bananas and serve under the french toast, with the salad on the side. You can drizzle with maple syrup if you like, but the banana and orange should be sweet enough.
